Ingredients
  

10 flying fish steaks

2 limes

2 TBSP Salt

1.5 Cups Water

3 TBSP Bajan Seasoning

2 Cups Seasoned Breadcrumbs

1 cup Flour

3 Eggs

Canola Oil

Instructions
 

In a mixing dish, combine the raw fish, lime juice, limes themselves, salt, and water.

    Allow for 10-15 minutes of sitting time. After rinsing the fish, season it with Bajan Seasoning.

      Place the flour on one dish, the breadcrumbs on another, and then salted and peppered eggs in a third bowl.

        Heat the canola oil in a frying pan until it barely covers the bottom, approximately 1/8-1/4 inch.

          To cook the fish, coat it in flour, then egg, then bread crumbs, and finally oil.

            Repeat with the remaining fish.
