In a stockpot, pour the regular water and add the cinnamon, mauby bark, star anise, cloves, and orange peel.
Bring to a boil then let the mixture simmer for 20 minutes. Turn off the heat and let cool overnight.
Strain out the bark and spices and in a jug add 1 cup of the mauby concentrate mixture and the 8 cups of sparkling water. Sweeten to taste and serve chilled with ice.
Store the rest of the mauby concentrate in the fridge for future drinks!
