For Serving:

  • Caribbean hot sauce or a flavorful dipping sauce of your choice

Instructions
 

Prepare the Dough:

  • In a large mixing bowl, combine the flour, baking powder, and salt.
  • Gradually add water while stirring, and knead the mixture until a smooth dough forms.
  • Incorporate the vegetable oil into the dough, ensuring it is well combined.
  • Cover the dough and let it rest for 30 minutes.

Prepare the Filling:

  • In a skillet over medium heat, sauté the onions, bell peppers, and garlic in vegetable oil until softened.
  • Add the cooked chicken or pork to the skillet, seasoning with salt, pepper, and any Caribbean spices or herbs of your choice.
  • Allow the filling to cool.

Shape and Fill the Dumplings:

  • Roll out the dough on a floured surface to about 1/8-inch thickness.
  • Cut circles from the dough using a round cutter or a glass.
  • Place a spoonful of the prepared filling in the center of each dough circle.
  • Fold the dough over the filling, forming a half-moon shape, and press the edges to seal.

Cook the Dumplings:

  • Bring a large pot of salted water to a boil.
  • Carefully drop the dumplings into the boiling water and cook until they float to the surface (about 5-7 minutes).
  • Remove the dumplings with a slotted spoon and drain.
