Ingredients
½ cup chopped onion
1 tablespoon grated fresh ginger
1 fresh serrano chile pepper, seeded and minced*
2 cloves garlic, minced
1 tablespoon vegetable oil
2 14.5 ounces cans reduced-chicken broth
1-pound sweet peeled potatoes in 1/2-inch pieces
1 cup chopped fresh or frozen okra
1 teaspoon snipped fresh thyme
Salt
½ recipe Shrimp-Pork Meatballs
5 cups baby spinach
1 14 ounces can unsweetened coconut milk

Instructions
Use a 4-quart Duct oven for the cooking, and use the first four ingredients mentioned (through garlic) in hot oil with medium heat.
Add the next four (through thymes) and reduce heat when it starts boiling. Uncover it for additional 15 minutes or till sweets potatoes gets tender. Add salt to season it as per your choice.
Add meatballs, spinach, and coconut milk. Heat with water till spinach is dried out.
Serve it with lime pieces
