It’s called Island Beach Chicken because it tastes like jerk chicken, as well as chicken from other island beach destinations like Jamaica, the Bahamas, the Virgin Islands, and Barbados. They all apply a spicy, well-seasoned mojo and cook over an open flame.

Ingredients
  

1 whole chicken cut into pieces or 8 bones in thighs, 4 leg quarters, etc.

1 roasted red bell pepper

1 ea habanero pepper  seeded and diced

1/4 cup green bell pepper

1 ea green onion

1/4 cup red onion

1/4 cup yellow onion

1/4 cup parsley

2 cloves garlic

1 teaspoon salt

1 teaspoon dried thyme

1/4 cup orange juice

1/4 cup lime juice

1/4 cup oil

Instructions
 

Place all of the ingredients in a blender or food processor, except the chicken. Blend or process until completely smooth.

    Marinate the chicken for 4 to 8 hours in the mixture.

      Set your grill to a medium heat of 350 degrees Fahrenheit for direct cooking. For my charcoal grill, that's around 1 chimney full of Kingsford Charcoal.
