Ingredients
  

  • 1 lb 450g beef stew meat, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 potatoes peeled and cubed
  • 1 cup 240ml beef broth
  • 1 can 14 oz/400g diced tomatoes
  • 1/2 teaspoon thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Hot sauce optional, for extra heat
  • Chopped fresh parsley for garnish optional

Instructions
 

  • Heat the vegetable oil in a large pot over medium heat. Add the beef pieces and brown them on all sides. This will take about 5-7 minutes. Remove the beef from the pot and set it aside.
  • In the same pot, add the chopped onion and cook for about 3-5 minutes, or until it becomes translucent. Add the minced garlic and cook for an additional minute.
  • Return the browned beef to the pot. Add the sliced carrots and cubed potatoes.
  • Pour in the beef broth and diced tomatoes, along with their juice. Add thyme, paprika, salt, and pepper. If you like it spicy, add a few drops of hot sauce.
  • Bring the stew to a boil, then reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the meat is tender.
  • Taste and adjust seasoning if needed. If the stew is too thick, you can add a bit more broth or water.
  • Serve hot, garnished with chopped fresh parsley if desired. It pairs wonderfully with crusty bread or rice.
