From Trinidad to Cuba, each island has its variation of the fish fritter also known as fish cakes or accras but the flavors are synonymous like Jirie’s Caribbean Spice blend. Saltfish accras are not only common at parties but also events such as weddings, funeral receptions, Good Fridays, and Sunday specials. These are very addictive!!
Saltfish Accras- (Salted Cod fritters)
Ingredients
- 1/2 lb Dried salted codfish (saltfish)
- 1 Lime or 1 lemon
- 1 cup All-purpose flour
- 2 tsp Baking powder
- 3/4 cup Scallions finely chopped
- 1 Large clove of garlic finely grated
- 1 tsp Parsley
- 1 tbsp Red garden pepper finely diced
- 1 Egg
- 2 tbsps Jire’s Caribbean Spice Seasoning blend
- ¼ – ½ cup of water
- Vegetable oil
Instructions
- Rinse saltfish with cold running water. In a pot, add the dried saltfish, squeeze the whole lime or lemon dropping in the citrus skins. Pour water to cover the fish. Bring to a boil then let simmer for about 25 minutes. (This step is necessary to remove the excess salt. Repeat this step if needed to remove more salt if preferred.)
- Rinse saltfish over cold water and while still warm, break apart the fish in a bowl, remove any fish scales or bones if found. Rinse again with cold water then squeeze out any excess water. Set saltfish aside.
- In the bowl of saltfish, add flour, baking powder, chopped scallions, parsley garlic, egg, garden pepper, and Jirie’s Caribbean Spice Blend. Mix thoroughly with a spoon while adding water slowly until the batter is thick.
- Fill a frying pan with vegetable oil halfway then heat to medium-high. When the oil is hot enough for frying a spoon in one heaping tablespoon per fritter. Do not crowd the pan (4-5 pieces). The batter should yield about 12-15 accras.
- Fry accras until golden in color and cook through. If accras are browning too quickly lower heat.
- Once fully cooked, set on a paper towel to cool. Serve warm with your favorite condiments. Tartar sauce is recommended.
