½ cup unsalted butter
1 cup granulated sugar
2 eggs
3-4 ripe bananas, mashed
¼ cup milk
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup chocolate chips or chopped nuts, if desired.
Preheat the oven to 350°F.
The oven rack should be in the bottom third of the oven
Oil and flour the pan. The load should be coated, there should be no flours clumps
If you're adding nuts, toast them for 10 minutes and allow them to cool before adding to the dough (the mixture)
Melt the butter on low heat. Or for the more cake-like loaf, let it soften and cream it with the sugar until fluffy
Add eggs to the butter mixture and combine till it smoothens.
Mash up the bananas, and add them to creamed butter mixture.
Sift the flour, baking soda, and salt. Add the chocolate or nuts, if desired, to another bowl.
Add the dry ingredients to the wet using a wooden spoon or spatula. Combine till all the ingredients are undried. Do not over mix
Pour the dough into the prepared pan
Bake for 55-65 minutes. Check if the top of the loaf to be a nice dark brown
Allow cooling for 10 minutes. Remove it from the pan and let it sit off for another 10 minutes
