Jerk BBQ Ribs
Ingredients
- 3 racks baby back ribs
- 5 scallions roughly chopped
- 1 medium yellow onion roughly chopped
- 1 key lime
- 6 cloves garlic peeled
- salt to taste
- ¾ cup Jirie Jamaican Jerk Seasoning mild or spicy
- 1 tbsp Jirie Scotch Bonnet Flakes
- ½ cup Jirie All Caribbean Seasoning
- 1 tbsp dried thyme
- 1 tsp black pepper
- ½ tsp smoked paprika
- ¾ cup dark soy sauce
- ½ cup cinnamon-flavored rum Fireball
Instructions
- Place the scallions, onions and garlic into a food processor with a pinch of salt, and pulse to mince.
- Add the dried seasoning, spices, and soy sauce, and blend for 15 to 20 seconds. Add the rum, and pulse to combine. Add the juice of the key lime to thin the marinade.
- Remove the inner membrane of the rib and thoroughly season the ribs with salt and pepper. Pour the jerk marinade, cover, and let rest in the refrigerator for at least 30 minutes.
- Preheat oven to 350 degrees
- Place the ribs on a baking tray and cover with aluminum foil
- Place the baking trays into the oven and bake until the ribs are tender, about 1 hour 15 minutes for baby back ribs
- Remove the aluminum foil, pour any juices from the tray, and reserve juice to mix with barbecue sauce . Let ribs cool completely before grilling.
- Preheat grill to medium-high. Grill ribs for 5-10 minutes on each side, basting with your favorite barbeque sauce while grilling until ribs are charred to your prefrence.
- Transfer the ribs to a chopping board and seprate.
