Ingredients

  

  • 1 Zucchini thickly sliced
  • 1 yellow zucchini quash thickly sliced
  • 1 bunch asparagus ends removed
  • 1 cup mushrooms sliced
  • 1 red bell pepper sliced
  • 1 orange bell pepper sliced
  • 2 tbsp olive oil extra virgin
  • 1 tbsp lemon jucie
  • 2 tbsp  Jirie’s dried Jamaican jerk seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

 

  • In a large bowl prepare the marinade by combining the olive oil, lemon jucie, Jirie's Jamaican Jerk seasoning, salt, and pepper.
  • Add the prepared and cut vegetables to the bowl. Ensure to mix throughly to evenly coat vegetables with marinade.
  • Let vegetables sit for 10-15 mintues.
  • You have the option to: Preheat your oven to 375°, place the vegetables in a single layer on a baking tray and roast on the top rack of your oven until vegetables are brown and tender.
  • Or you can grill the vegetables on medium heat (you can use a grill pan on your stovetop) for 10-15 minutes, flipping the pieces occasionally until they are charred and tender.
  • Best served warm.

Notes

Ensure that vegetables are even in size and your favorite veggies can easily be swapped into this recipe.
