Plantains are widely regarded as the ideal Dominican cuisine component, to the extent where Dominicans living abroad utilize the plantain as a symbol of patriotism. In this family, plantains are the most common grocery item. I never go to the grocery store without purchasing at least a few. Plantains are a must-have component in any Dominican household, in my opinion. It may be prepared in two ways: boiled or fried.

2 unripe plantain
1/2 cup oil
1 tablespoon salt
1 ripe tomato chopped
4 sprigs parsley
1 clove garlic
1/4 teaspoons pepper
1 tablespoon olive oil
Plantains should be peeled and sliced into 1 inch thick pieces.
To make the tostones, heat the oil in a small saucepan over medium heat and fry the plantains until light brown, about 5 minutes.
Using a tostonera, flatten the plantains to about 1/4 inch thick. Thin tostones are my favorite since they are crispier and last longer. If you don't have a tostonera, you may use the bottom of a large jar and press on a cutting table.
Fry the plantains for another 5 minutes, or until a golden yellow on both sides.
Serve immediately after seasoning with salt to taste. It's best served hot and fresh as a side dish, but if you want to try it as an appetizer, we provide a dip option.
