Ingredients
  

3 lb chicken

1 medium chopped onion

4 cloves crushed garlic

½ bell chopped pepper

1 medium carrot, thinly chopped

1 medium chopped tomato

3 stalks chopped scallion

½ Scotch Bonnet Pepper, seeds removed and chopped

3 sprigs thyme

1 tsp all-purpose seasoning or chicken seasoning

1 tsp salt • 2 cloves (optional) • 1 tbsp browning

¼ cup ketchup

¼ cup oil

2 cups water

1 lime

Instructions
 

De-skin the chicken and wash it in water with lime juice.

    Drain the excess water from the chicken and chop it into small pieces.

      Put onion, thyme, garlic, scallion, Scotch Bonnet Pepper, all-purpose or chicken seasoning, cloves, half tablespoon of salt, and the browning.

        Rub all the mentioned ingredients into the chicken. After coating the chicken with the seasoning, leave it for marination for an hour.

          Heat the estimated cooking oil to let the chicken be submerged halfway

            Extract onion, thyme, garlic, pepper, scallion, clover from the chicken as much as you can. Add the pieces to the hot oil and fry for less than 5 minutes. Be sure that all chicken sides are fried.

              Remove 1 tsp of cooking oil from the pan on medium heat. Now you should add the marinade that you removed from the chicken.

                Put carrot, bell pepper, tomato, and sauté for three minutes.

                  Add 2 cups of water and ketchup till pot starts bubbling, then add the chicken.

                    Stir and leave to cook for 25 to 30 minutes.

                      If the water is reduced to thick gravy and chicken is cooked, your dish is ready!
