Jamaican Rum Cake

Ingredients:

1 (18 1/2-ounce) box yellow cake mix

1 box French vanilla instant pudding mix

4 large eggs (room temperature)

Half a cup water

1/2 cup vegetable oil

About 1/2 cup Bacardi dark rum

For the glaze:

4 ounces butter

1/4 cup water

1 cup pure cane sugar

1/2-cup Bacardi dark rum

Steps for the cake:

  • Gather the ingredients and Pre-heat the oven to 325 F. Thoroughly grease a Bundt pan and set aside.
  • In a large mixing bowl, combine cake mix, pudding mix, eggs, water, oil, and 1/2 cup dark rum. Mix by hand or an electric mixer until the batter is smooth.
  • Pour the batter into the prepared Bundt pan.
  • Bake for 1 hour. Remove the cake from the oven and allow it to cool for 20 minutes. Invert the cake and let it cool completely.
  • Transfer the cooled cake to a serving platter. Using a toothpick, prick the top of the cake to form small holes that will absorb the rum glaze.

Steps for Glaze:

  • In a heavy saucepan, melt the butter.
  • Whisk in the water and sugar.
  • Slowly bring the sugar and butter mixture to a light boil and cook for 5 minutes while constantly stirring.
  • Remove the sugar mixture from the heat and stir in the rum and Allow the glaze to cool slightly before glazing the cake.
  • Drizzle and smooth some of the glazes over the top and sides of the cake. Allow the cake to absorb the glaze and then repeat until the glaze is gone.
  • Serve the rum cake as is or with a scoop of vanilla ice cream or a dollop of freshly whipped heavy cream.

Caribbean Christmas Cake

Ingredients:

1 pounds dried fruits

1 cup strong rum

10-ounce unsalted butter

1 cup granulated sugar

5 large eggs

2 ¼ cup flour

2 teaspoons baking powder

3 tablespoons browning

2 tablespoons molasses

1 teaspoon all-spice

1 teaspoon ground nutmeg

2 teaspoons grated Lime

1 teaspoon almond extract

1 teaspoon vanilla extract

Steps:

  • Start by chopping all the fruits into little chunks, then place them in a large bowl.
  • Pour rum and wine in the bowl of fruit, add enough alcohol to cover fruits. Cover and leave it for 2 days so it soaks up the alcohol.
  • Pour the soaked fruit together with any remaining juices into a blender and blend until it’s a paste-like consistency.
  • Preheat the oven to 160°C/325°F. Grease the cake tin with baking parchment.
  • Cream together the butter and sugar at high speed until it’s fluffy and starting to look white, about 3- 5 minutes.
  • Stir in the eggs, one at a time, beating the mixture well and adding a tablespoon of the flour with the last egg to prevent the batter from curdling.
  • Sift in the flour, baking powder, followed by browning, molasses, almond and vanilla extract, mixed spice, and nutmeg. Mix the batter and add the fruit blend and lime zest.
  • Stir well until everything is fully combined. Scrape down the sides of the mixing bowl.
  • Pour batter into a greased 10-inch cake pan.
  • Bake until a cake tester comes out clean, about 2 hours.
  • If desired, poke the cake with a toothpick, then brush each with about ¼ cup rum or sweet wine while the cake is still hot. Let the cake soak up the rum.
  • Let it cool completely before serving.

Guava Duff

Ingredients-

12 -15 large guavas

3 cups flour

4 teaspoons baking powder

1⁄2 teaspoon salt

1⁄4 cup sugar

About 1⁄4 cup butter

2 eggs, separated

2 teaspoons vanilla essence

 1 cup granulated sugar

1 cup butter

2 egg whites

1 tablespoon rum

Steps:

  • Peel and core guavas. Rub cores through a sieve to obtain some of the pulp, and mix with cut-up guavas. Add sugar to taste.
  • Beat butter, Crisco with sugar, then beat in egg yokes.
  • Sieve flour, baking powder, and salt and fold into butter/egg mixture. Add vanilla.
  • Divide dough into 3 balls. Refrigerate 1/2 hour until firm.
  • Spread out each of the balls on a piece of foil; cover with Guava. Starting at one end, fold into a roll.
  • Cover with foil, place in baking bag, and seal. Boil 1 hour in a large pot with hot water. Slice and serve warm with Sauce.
  • FOR SAUCE: Beat egg whites in the dish until foamy. Cream butter and sugar in a separate dish until the sugar has dissolved. Gradually add egg whites, vanilla and continue beating till smooth.
  • Add the sauce on warm Guava Duff when serving.

Easy Bananas Flambe

Ingredients:

2 bananas

2 tablespoons sunflower oil

1/4 cup sugar

1/2 cup white rum

Juice from 1 lime

Serving suggestion: Vanilla Ice Cream

Steps:

  • Gather the ingredients and Peel and halve each banana lengthwise.
  • Heat the oil in a frying pan over medium heat.
  • Brown the bananas for 5 minutes on each side.
  • Add the sugar and pour in the rum.
  • Cook for 2 minutes.
  • Flambé and Sprinkle with lime juice and serve at once with vanilla ice cream as per your desire.
